How is the Clearspring Organic Tamari Soya Sauce made?

Using brilliant craftsmanship and a centuries-old recipe, the Yaemon family has been making this exceptional Tamari Soya Sauce for over six generations.

Tamari Soya Sauce is made by adding koji culture (a fermentation agent) to soya beans which are then added to wooden cedar kegs to age over two summers.

At the beginning of fermentation, a process called ‘kumikake’ is performed. This involves mixing the liquid on a daily basis for up to three months.

The soya beans are pressed using the same stones that have been used for over 500 years. The pressing process is what gives the soya sauce its aroma, flavour, colour, texture, and unique umami-ness.
