With the combination of fruity apple, hearty rum and sweet sponge, this French Classic is guaranteed to be a crowd-pleaser. And, it couldn’t be simpler to whip up. Our top tip? Make the most of PlantX’s range of gluten-free baking products to make this delicious vegan cake gluten-free too! 

Ingredients

Directions

  1. Preheat the oven to 180°C.
  2. Grease a regular cake tin and line the bottom with baking parchment. 
  3. Peel and chop the baking apples into small cubes. Set aside. 
  4. Mix together the sugar and butter until light and fluffy. 
  5. In a separate bowl, combine 4 tablespoons of water with the 2 tsp of the Free & Easy egg replacer
  6. Mix this into the butter and sugar mixture a little at a time. 
  7. Add the vanilla extract and the dark rum. Mix until combined. 
  8. Stir the chopped apples into the cake mix until distributed evenly. 
  9. Use a spatula to transfer your mixture into the pre-prepared tin. 
  10. Sprinkle an additional tablespoon of sugar over the top of the cake mixture. 
  11. Bake for 30-40 minutes, or until the cake is golden brown and a skewer inserted into the centre comes out clean. 
  12. Allow to cool. 
  13. Remove the cake from the tin and serve on its own or with a dollop of Oatly Whippable Cream

  1. Preheat the oven to 180°C.
  2. Grease a regular cake tin and line the bottom with baking parchment. 
  3. Sift the flour, baking powder, baking soda, salt, cinnamon and nutmeg into a large mixing bowl. Add the grated carrot and brown sugar. 
  4. In a separate bowl, mix the ground flax seeds with water. Leave to rest for a few minutes to create your flax seed eggs. 
  5. While your flax seed eggs are resting, in another bowl, mix the canola oil with the apple cider vinegar. Then add your flax seed eggs. 
  6. Add this mixture to the larger bowl with the carrots and flour and let the batter rest for a few minutes. Then, mix well. 
  7. If your batter is too dry, add a splash of non-dairy milk. 
  8. Transfer your mixture to the greased tin and bake for 30 minutes, or until a skewer inserted into the centre comes out clean. 
  9. While your cake is cooling, prepare the icing. 
  10.  Allow the cream cheese to soften, then mix with the icing sugar and lemon juice with a whisk until light and creamy.
  11. When your cake is cool, add the icing, sprinkle with walnuts and serve! 

Easy Vegan Brownies

Directions

  1. Preheat your oven to 180°C
  2. Grease and line a baking tin. 
  3. Sift the brownie mix into a bowl. 
  4. Add the oil and water and mix until combined. 
  5. Transfer the mixture into your baking tin. 
  6. Bake for 15-25 minutes, depending on how gooey you want your brownies to be!
  7. Cool on a wire rack and enjoy.
