I swear the miso looks darker than it did before. What happened?
Once Clearspring puts its tasty miso in its jars for packing, it could still continue to ferment over time. This maturation will cause miso to look darker. It’s still good to eat, don’t worry! If you’d like to slow down the fermentation, you can keep the jar stored in the fridge.
