Grape must is just freshly pressed grape juice. It is usually reduced to bring out the sugars of the grape juice. It’s this must and wine vinegar that is then combined to make Balsamic Vinegar of Modena. When that balsamic vinegar is further reduced, you get a balsamic glaze.
