Clearspring Wholefoods 100% Italian Extra Virgin Olive Oil is made from two kinds of olives - Dolce di Rossano and Coratina. Dolce di Rossano olives give this oil its mild and fruity notes, while the Coratina gives it its punch. These olives are sourced directly from the Italian regions of Calabria and Puglia, respectively.

The olive oil is drawn out using a centrifugation process called cold extraction. This process separates the wet solids from the oil, which is clarified along the way. Cold extraction is the preferred method for making olive oil because it is cleaner. It also allows for better quality control.

I’ve heard that when you heat cold-extracted oils, they lose their beneficial properties. Is that true?

Cold extraction brings out the oil without the introduction of heat. This way, the oil’s natural properties are kept. By introducing heat, it could lose its nutritional value. That’s why Extra Virgin Olive Oil is often drizzled on your meals after cooking.

That doesn’t mean you can use this for cooking, in fact, you can. But we do recommend not exceeding the max heating temperature.
