Use 500g Filippini Gluten-Free Pizza Mix, 320g warm water, 8g quick yeast or 25g fresh yeast, 30g extra virgin olive oil and 5g salt for the base. For a topping use 250g tomato passata, 200g sliced vegan mozzarella, extra virgin olive oil, fine salt and oregano. Feel free to experiment with different toppings like peppers, olives, mushrooms, basil, and more!
To prepare, dissolve the yeast in the water using a large bowl, add Filippini Pizza Mix and mix for 3-5 minutes. Add the oil and the salt until fully mixed. Put the dough in an oiled baking tray (olive oil is best). Leave it to rise for 1½ hours at room temperature while combining the passata with oil, salt and oregano.
Preheat the oven to 250°c, spread the tomato sauce over the pizza dough and cook for 15-20 minutes. Take the pizza out of the oven, add the vegan mozzarella and put it back in the oven for 5-8 minutes.
