What is Nigari and is it good for me?

Although it might sound unnatural, Nigari, also known as Bittern, is actually a salt solution. It forms when table salt precipitates from seawater or brines. It’s an excellent natural source of magnesium and is often used as a thickener in foods.

It also contains calcium and potassium ions as well as chloride, sulfate and iodide. Nigari is used in tofu to help give it its final form and preserve the flavour of the soybeans in a natural way.
