How is Wine Vinegar made and why is it good for cooking?
Essentially, vinegar is a diluted version of ethanoic acid in water and a process of double fermentation where the ethanol is produced by the fermentation of sugars by yeast. The result is a rich, intense and tangy flavour that works well with salty and/or spicy foods, neutralising the flavours.
I love cooking with red wine vinegar and this Aspalls' version is by far my favourite compared to other brands (which often cost more anyway). I find the acidity is just right and it works great in sauces and in salads dressings (at least that's what I've tried so far). Worth a purchase!
