What is a good lentil recipe?
We recommend making a “lentilese”. It’s like a bolognese with lentils instead of mince (and a healthier option than many vegan mince substitutes). Roughly chop a large brown onion and 4 cloves of garlic and fry in olive oil, and a pinch of salt, until golden. Lower heat on the saucepan. Add 100g of lentils (any variety will work) and coat them in oil.
Add one tin of chopped tomatoes, then fill the empty tin with water and add the water into the saucepan. Stir in a tablespoon of tomato puree and a teaspoon of dried oregano. Bring to the boil, then lower heat and allow to simmer until the lentils are soft. Salt and pepper to taste.
