What’s yacon? Often written as yacón, it is a type of tuber that looks very much like a sweet potato. Aside from looks, yacon is actually very different. It has no starch, has a creamy off-white colour, and has a crisp and sweet taste. That’s why it’s also known as a Peruvian ground apple!
