Clearspring’s Organic Rice Mirin is a delicious condiment that can add sweetness to your sauces, marinades and salad dressings. It’s simply perfect brushed over tofu and grilled, leaving a depth of flavour that’s out of this world.
Mirin is a staple ingredient in Japanese kitchens but is gaining ground in the UK, as an alternative to cooking alcohol. Clearspring’s Organic Rice Mirin is made from naturally fermented koji rice, a type of cooked rice that is inoculated with a fermentation culture called Aspergillus Oryzae.
Unlike many commercial mirin products, Clearspring’s Organic Rice Mirin contains no added sugar or preservatives, so it’s as natural as can be. The only thing added is a touch of salt to enhance the authentic flavour.

How do I store my mirin?
Made with shochu, rather than sake, Clearspring’s Organic Rice Mirin is a type of hon mirin or true mirin. It typically contains more alcohol than mirin or mirin-like condiments.
Due to the alcohol content, Clearspring’s Organic Rice Mirin is best stored in the cupboard. A cool, dark place is ideal for up to three months to retain its quality. If you do choose to store your mirin in the fridge, you may find that the sugar content crystallises, affecting the texture of your sauces and dressings.
