Do I need to cook miso?

Miso doesn’t need to be cooked, so feel free to add it to salad dressings, dips, and cake icing if you fancy. We wouldn’t recommend eating it on its own though, as it’s pretty salty. Here’s a tip though: adding miso to boiling water or very hot foods kills its good bacteria. This is why it’s best to add miso to the end of the cooking process, to retain as many nutrients as possible.
