Biona Organic Yellow Thai Curry Jackfruit is ready to use and great for comforting hearty dishes. Try making this simple vegan curry recipe in a few steps.

You will need 2 tbsp of black pepper, 1 tbsp of cumin, 1 tbsp coriander, ½ tbsp of chilli, 1 tbsp of olive oil, 2 bay leaves, 2 cloves of finely chopped garlic, 2 tbsp of finely grated ginger, 1 large chopped onion, 2 cups of diced tomatoes, 1 can of Biona Organic Yellow Thai Curry Jackfruit, 1 tsp of turmeric, 1 tsp of dry thyme, 1 tsp of paprika, 1 tsp of salt, 1 can of coconut milk, 1 ½ cups of vegetable stock.

To cook this easy recipe heat the olive oil in a large pan or skillet over medium heat. Add the spices and the bay leaves and cook for 3-4 minutes, while stirring. Remove the bay leaves, and add the garlic, ginger, onion, and tomatoes. Cook for 7-8 minutes until the tomatoes are soft. 

Add Biona Organic Yellow Thai Curry Jackfruit and cook for around 10 minutes, while stirring occasionally. Add the coconut milk and the vegetable stock and bring to simmer. Cover and cook for 15 minutes until the sauce is thicker and creamy. Serve with rice and enjoy!
