Cooking Instructions

Serves 2

Heat a generous amount of coconut oil in a wok and fry 2 heaped teaspoons of Mekhala’s Organic Red Curry Paste for a minute or two until fragrant.

Add some sliced red pepper, broccoli florets, big cubes of aubergine and sliced beancurd and mix them in the pan until everything is coated in the paste and sizzling.

Stir fry the mix for about 5 minutes then add a can of coconut milk and turn the heat down.

Simmer until the vegetables are tender.

Serve with jasmine rice and fresh coriander.
