Mekhala’s Organic Green Curry Paste doubles as a phenomenal marinade too! Just cover some veg in the paste, leave them in the fridge for a few hours to marinade, then roast or grill them in the oven. Wrap in filo pastry parcels and dip them in some sweet Thai soy and chilli dip: holy moly!

Cooking Instructions

Fry up 2 generous teaspoons of Mekhala’s Organic Green Curry Paste in hot coconut oil in a large pan or wok until fragrant (about a minute or two).

Throw in some pre-cooked vegetables and stir fry in the paste for 2 minutes.

Add a tin of coconut milk to the pan and stir until the sauce is uniform.

Season to taste and serve with some freshly chopped coriander and cooked rice.
