Who doesn’t love mac n cheese? I know vegans are obsessed with it and there are so many vegan recipes out there already, but I think this is one of the best I’ve tried! A complete crowd pleaser and full of so many tasty ingredients which really add depth and flavour to the dish.
I have topped this one with truffle-infused olive oil and some pre-made fried chicken pieces but you can add whatever you fancy or even just have it as it is! I hope you enjoy this one as much as I loved eating it at home!

1 Onion
1 Carrot (large)
1 Sweet Potato (Medium)
Garlic, 1 bulb
Cashews, 50g
Olive oil, 1 tbsp
Salt and Pepper (season to taste), 2 pinches

Alternative plant milk of choice (unsweetened) 300 ml
Mustard, 1tsp
White Miso, 1tsp
Dried Thyme, 1tsp
Smoked Paprika, 1tsp
Vegan Cheese, 30g
Nutritional Yeast, 3tbsp
White Macaroni, 500g
Toppings (Optional)

Vegan Chicken, 150g
Truffle oil, 1tsp
Directions
Bring the water to boil and salt generously. Cook the macaroni according to the packet instructions - you want it to be al dente as it will continue to cook in the oven once the sauce is ready.
Cut up and roast the onion, carrot, sweet potato, garlic bulb together with olive oil, salt and pepper for 20 mins at 180 degrees, keep an eye on it and ensure it isn't burnt
Bring more water to boil (no salt needed) and add the cashews, cook for 30 minutes or until soft, this can be done whilst the veggies are roasting. Once the cashews are softened you can drain them.
In a food processor/ blender add the cooked cashews to 300ml of alternative plant-based milk (I like unsweetened soy but others work well too) then add the mustard, miso, thyme, smoked paprika, roasted veg, vegan cheese, nutritional yeast and blend until smooth. Once smooth, season to taste with salt and pepper.
Choose a baking dish large enough for your pasta, add the pasta and sauce and stir so every piece is coated. Put in a preheated oven at 180degrees and cook for 20 minutes or until Golden Brown.
Once cooked in my dish I added some vegan chicken pieces and truffle oil to have on top, but you can eat the dish plain which is gorgeous or feel free to add other toppings. Good toppings could be Vegan Bacon Crispy Onions, Vegan Pesto, Vegan Sausage, Vegan Chorizo, You get the idea so get creative! Enjoy!

I absolutely love this recipe, I have made it many times with so many different topping combinations.
Top Tip: If you want it extra cheesy, add some more grated vegan cheese towards the end and grill for 5 or 10 minutes until this goes extra crispy and golden! I can’t wait for you to try it! Let me know what you think!
